2 small eggplants
1 med. onion
3 cloves garlic
4-5 small tomatoes
~1.5 tsp. ginger
1 cup frozen peas
2 tsp. curry powder
2 tsp. cumin
1 tsp. tumeric
1 tsp. paprika
1/2 tsp. salt
1 tsp. black pepper
* 2 tsp. olive oil for pan

1. Broil eggplant in oven for about 15 min.
2. Crush and chop garlic.
3. Dice white onion.
4. Chop around 1.5 tsp worth of fresh ginger.
5. Dice tomatoes.
6. Remove eggplant when soft and slice.
7. In an oiled pan, saute the garlic and onion over a med heat.
8. Add the rest of the vegetables. Stir to mix.
9. Add all spices (curry, cumin, tumeric, paprika, salt, pepper) and mix to combine.
10. Cover pan for ~5-10 min.
11. Serve with steamed rice.
